Dung
Wolves periodically produce Dung over time, and do so at an increased rate when they are in darkness.
Wolves must be fed meat or Kibble to produce dung; however, one should avoid feeding them wolfchops or rotten flesh.
Wolves will produce dung at a random delay - usually five to ten minutes - after being fed; each feeding will produce one dung.
To be able to poop, wolves need to have an empty (air) block all around them. So the minimum size of a room in which you keep your wolf is 3x3, otherwise it will never produce dung.
Dung is primarily used in the creation of Tanned Leather.
Farming
Lacking easily-manipulable water, it is possible to place wolves on a floor of hoppers on all 8 sides, and manually collect from those, if you make sure the wolves are standing in total darkness.
Automation
The principal method of harvesting dung is to put the wolf on a floating block over a water flow, using a Dispenser to feed it.
A Dispenser is filled with junk items (like dirt piles), which are spat out on top of a Pressure Plate.
That pressure plate is on top of a block, with a Redstone Torch to its side, just under the dispenser.
Every time the dispenser spits out an item, it lands on the pressure plate, which turns off the redstone torch.
When the item despawns after 5 minutes, the torch turns back on, making the dispenser spit out another item, and turns the torch back off. This creates a 5 minutes timer, that will allow us to keep the wolf fed.
To do that, there is a second dispenser, placed on the opposite side of the pressure plate.
This second dispenser is facing down, directly into a Cobweb, and is filled with food (it is best to use Kibble for that purpose as soon as you can make it).
The cobweb allows the food to fall down slowly, so that the wolf can eat when he's hungry, and if he's not it will fall down into water, and end up in the same place as the dung produced, so there's no waste.
